BBQ Pulled Pork

1 seven pound pork Boston butt

Preheat oven to 300°.  Rub pork with mixture of paprika, cayenne, salt, black pepper, garlic powder, onion powder, chili powder, thyme and oregano.  It’s better if you rub meat with seasoning the night before you are cooking it.  Wrap pork in several layers of aluminum foil, sealing tightly at the top.  Put in a deep roasting pan (big aluminum disposable type), seam side up. Fill pan halfway with water.  Bake, refilling water halfway through if needed, until pork is very tender and falling off the bone, about 8 hours.  Unwrap pork, pouring off juices and place on platter or cutting board. Let sit for about an hour or so before pulling.  Pull pork apart with meat forks and your hands, discarding as much fat as possible.  Serve warm with BBQ sauce.

To do ahead of time, you may pull pork, place in pan and cover with BBQ sauce. Reheat in oven until warm, about 45 minutes.
